Bring on the Beef

Bring on the Baby Food!

As you may recall, I made 99.9% of my older son's baby food.  I really enjoyed the process and appreciated that I was able to ensure he was getting healthy nutrition and a wide variety of flavors.

That said, Buddy Man also had some tummy issues.  Early on, he was switched to soy formula.  Despite that change, however, we had some projectile vomit issues on a fairly regular basis, and because of those issues, I was pretty cautious about his food.  Each food was given for a week before we tried something new, and even though I was giving him a variety, it didn't feel like it since I was so careful to isolate new foods.  I never made any "fun" combinations of foods and was hesitant to incorporate herbs, spices, and new flavors.

Dutch, on the other hand, doesn't appear to have any of these issues.  He's happy as a clam, and while he could easily be called a "spitty" baby, he certainly is not like his older brother!  At three months I started him on rice cereal once per day, with his morning bottle.  He's gearing up toward needing the cereal twice per day and dropping his fourth (bedtime) bottle now that we're approaching the four-month mark.  And, with that milestone and plenty of practice with a spoon under our belts, I'll be moving toward making baby foods again!  I'm excited to restart the process and once again fostering an adventurous palate with my children (probably even moreso since my now two year-old is entering a picky stage...or maybe he's just too busy to eat!).

As I look to the future and baby food prep, I am forced to remind myself of a few things, though.  First, and most obvious, is that I need to revisit some of my favorite resources for age-appropriate foods.  It's so hard to remember what fruits and veggies should not be offered until certain ages!  I'm a more "seasoned" mommy now, and not as paranoid as I once was about certain things.  I'm more willing to take "risks" and break a few of the rules (strawberries before the first birthday, anyone?!) but I need to refresh my memory on those things that absolutely need to be avoided for a while yet!  Secondly, I have to remind myself that I'm about to be a full-time student again.  My time will be short.  I'll need to plan ahead a little better so that I have a stash of food prepared in advance.  Additionally, I'll have to rethink how I introduce new foods, since the day care center will be feeding Dutch the majority of his meals.  I'm very fortunate that they will feed him whatever I bring in, and follow my lead on things.  So I'm still free to make my own foods and am not backed into a corner with a certain brand or store-bought anything unless I want to be.  But I still want to witness Dutch's "firsts".  I still want to be aware of any reactions he might have first-hand, rather than a secondary report from daycare.  Thirdly, my two boys are very different!  Dutch doesn't give any indication of tummy issues.  So I'll be able to blend flavors and provide more "meals" than I could before.  I can combine fruits, veggies, grains, and meats.  I'll probably be able to mix things up a bit to add variety to the daily diet.

And that last point is really the point of this post.  I'm looking for variety.  I'm looking for good combinations.  I'm looking for healthy vitamins and minerals.  So what am I doing?  I'm shopping for baby food!  That's right, you heard me correctly.  I'm actually doing research, looking at jarred foods at the store and online and getting inspiration.  I'm writing down combos that the big name companies create in the processed baby foods.  I'm considering in-season produce versus frozen.  I'm thinking about prep time for washing, peeling, and preparing the foods for puree.  I'm contemplating storage and transport to daycare.  I'm factoring in first introduction to fruits and veggies and then combining the two into more robust dishes at the six-month mark.  I'm debating meat possibilities, remembering that meats were the biggest hurdle with my oldest son.

And yes, I even stopped to think that perhaps it would be just the same if I bought jarred baby food.  Yes, it's a little more expensive.  Yes, there's more uncertainty of exactly what is in each dish.  And right there is where I stop myself and remind myself that making my own baby food is the best choice for my family.  I willingly will sacrifice my own time to provide the best nutrition for my kids.

What's Cookin' in December?

It's beginning to look a lot like Christmas!  Well, not around here, it's not.  Not only do we have mild weather year-round in Monterey, but since we're moving in two weeks, I decided not to bust out the Christmas decor.  That's practically sinful, since, if you know me in real life, you know I'm the tradition/holiday Nazi.  But I never, never, never, decorate before Thanksgiving, since that's in conjunction with our annual Tree Trimming Party, which is the kick-off to Christmas around here!

Anyway, so we're not decorating (bah humbug!).  I'm not making cookies (double bah humbug!).  But I am serving our traditional Tree Trimming party food (and I might bust out a miniature tree for the table, so so we have a little holly jolly around here) and I am turnin' up the Christmas music en masse, starting today!  Our annual Christmas Poem (my grandma started the tradition of writing a poem, rather than a Christmas letter, each year, and my dad followed suit....then of course I had to join in the fun when I moved out on my own!) will be mailed out today, and later this week I'll gather all the gifts so that as we traverse the country in a couple weeks we can deliver the goodies to our family as we visit along the way.  It'll be just like Santa delivering toys to all the children!  We should be at Mama's house by Christmas Eve (her birthday!).

But just because I'm not making cookies doesn't mean you can't!!  Here are the holiday favorites that graced our cookie jar last year!  Come on over to my kitchen where I'll pour you a glass of milk while you nibble cookies and I copy down the recipes for you!

What's Cooking in November?

I know I'm a little late in sharing these upcoming recipes, but, better late than never, right?  Seems to be the story of my life these days!  Regardless, now that we've left Halloween in the dust (well, except for the hidden stash of candy my husband will never know is in the dining room buffet), it's time to start prepping for holiday parties, house guests, and meals that'll feed a crowd on a cold winter's night.  The dishes I'm sharing in my kitchen this month are just that:  Perfect for a family night in, amazing if you need to freeze and reheat, and fabulous to share with visitors.  Trust me, you'll see!

What's Cookin' in October?

It's one of my favorite times of the year!  The air is getting crisp, there's a haunting howl in the wind, and everything gets just a little spookier after the sun goes down...  I just adore Halloween!  Picking out a favorite costume (which was always some variation of a witch in my case), ensuring my mama had the best candy to hand out (which my brothers and I would sneak so she'd ultimately have to buy more for the big day), parties in school, and ghoulishly fun foods!

Well this year we're celebrating in my kitchen!  I'll be posting some favorite throw-backs for the little goblins to enjoy.  I'll also be serving up some steamy bowls of healthy soups to keep you warm in the chilly evenings.  Some autumn comfort foods will make an appearance to accompany the soups, too.  And finally, I'll be sharing some favorite party appetizers as we officially welcome the holiday season!  Yes, the "theme" this month was actually the holiday gathering of hors d'oeuvres (yes, that's the correct French spelling!), but I got a little carried away.  

Must be all the candy.  Of course.

What's Cookin' in September?!

Several months ago I did a mini-series of favorite Asian dishes over on my cooking blog.  You can check those out here, if you'd like.  But, as I lived in Japan for three years, I promised I'd post some other Far East Favorites in the future.  

Well, folks, the future is here!  Or, rather, it's over in my kitchen!

These aren't all Okinawan, or even Japanese, dishes.  In fact, only one of the four recipes hails from the Land of the Rising Sun.  Regardless, I'm sure you'll love them all.  Grab your chopsticks and dig in!

You're Invited!

I have a brand new button for my cooking blog!!!  Yay!!  I've been lusting over buttons for a while now, but I didn't know how to make one and didn't want to pay out the wha-zoo to get one.  So here I sat, buttonless, feeling like the last girl in the neighborhood to get jelly shoes (oh wait, I never had a pair...sigh).

Imagine my excitement when Deana of Country Momma Cooks (I'm sorry Deana, that we spell "mama" differently, I almost got your blog wrong typing this post!) gave some awesome directions for how to make your own button!  I jumped right into that little project, and now, only $10 later, I have my own button.  Yes, I had to bite the bullet to buy some clip art.  But I found just what I was looking for.  OK, well, the hair color is a little off, but I'm a natural brunette (shhh.....don't tell) so I guess it's ok that my little button gal isn't rockin' the blonde.  Oh, and my eyes are brown too.  Sheesh, folks, I'm sorry I can't commission a clipart designer to render my likeness into a cute little clipart hottie!

Anyway, here's the worldwide debut of my brand spankin' new button!  I do hope you'll grab it and hang it on your sidebar.  It's your very own open invitation to visit my kitchen any time you'd like!

Retro Mama #8

As you might recall, we recently weaned Bunkey off of soy formula and onto 100% whole milk.  Cow's Milk.  You have no idea how excited that makes me!

That said, I still had a bit of the formula left, so I was mixing a scoop or two of it into Bunkey's oatmeal for breakfast in the morning, just to add some calories and flavor.  Additionally, he was still eating the Gerber Baby Oatmeal (aka Baby's First Food cereal).  While the oatmeal wasn't too terribly expensive, and he does love it, I was eager to move beyond all thing baby food, and start giving Bunkey "normal" breakfasts.

So, as I've done with nearly every milestone, I called my mama for advice.  I needed breakfast ideas.  I didn't want to set Bunkey up with a tray full of "Cheerios" (he loves all Kashi cereal, and since that's what Hubs eats, we already have it on hand and I normally keep an old puffs container of the stuff in the diaper bag for snacks on the go) as he's known to toss the bits overboard if there are too many on the tray at once.  And let's face it, it's kind of a pain to place 4-5 pieces of cereal on a highchair tray 50 times in order to fill him up!

Bunkey loves his oatmeal.  He also loves the Gerber oats with fruit (Breakfast Buddies, in apple, cherry, or peach), but at $1 (or more) per package, that adds up.  Those are perfect for when we're traveling (as long as we have a microwave in the room) but beyond that, I really wanted to avoid buying them for every day.

A while ago, I tried to feed Bunkey a scrambled egg.  The first time he liked it.  The second time he threw up.  I hadn't tried since and was really nervous about trying again.  But, as she often does, Mama encouraged me, and suggested I add some cheese.  Of course!  Why hadn't I thought of that?  I wasn't the biggest fan of eggs growing up, but somewhere around 5th grade I wanted to be cool and order an omelet at brunch, and came to love my eggs mixed with all kinds of tasty goodness!

So this morning I added some shredded cheese to Bunkey's egg.  He balked at first, taking it off the fork.  Instead he chowed down on the turkey sausage I gave him.  After a while, I got him to giggle so he'd open his mouth wide and I snuck in a bite of the eggs, by hand.  To which he responded, "Mmmmmm....."  Yay!!  We had a winner!  So he wouldn't take it off the fork, or even mixed with a bite of meat, but he'd take it if I fed him by hand.  It's progress...

And to add to my theory that cheese makes everything better, we tried to give Bunkey a slice of deli meat (turkey) the other day and he hated it.  But the next day I made him a grilled turkey and cheese sandwich for lunch and he gobbled it right up!  Yep, just split a piece of American cheese in half, placed the turkey between, popped all that between two slices of whole wheat bread, and presto....lunch!

I'm just glad we're finally getting Bunkey to consume proteins, different meat textures, and grown up foods!  And my grocery bill so more than thrilled there's no more formula involved!

So, it may not be ketchup, but cheese makes anything taste yummy!

Breakfast is not really my thing.  I'm a creature of habit, and really, a smoothie works great to fuel my morning workout.  But with a hungry husband and toddler, that's just not going to cut it for my two favorite guys!  This month I'm featuring some favorite morning goodies that even make my mouth water for the most important meal of the day!  Pull up a chair in my kitchen and let's get this party started!

What's Cooking Wednesday: Giddy Up Grill Food

It's getting warmer (at least it probably is where you live; Monterey is famously cool year-round) and that means one thing: grilling out at least four times per week! And what better way to usher in grilling season than to feature some of my favorite outdoor cookin' recipes, starting with that All-American classic, the cheeseburger! A First

Yesterday I did something I've never done before.  And I loved it!

Yesterday I went out - totally by myself - and did something just for me, that I've always wanted to do.  And I did it alone.  None of my girlfriends were available.  My husband wasn't really interested (and besides, I needed someone to take care of the little guy).  But I didn't want to waste the opportunity to do something I really wanted just because I'd be flying solo.

I attended a cooking class at Williams-Sonoma!  I learned about the cooking demonstrations they host a few months ago and was intrigued.  But I never knew anyone that was really interested.  Only a few of my friends really enjoy cooking, and not many of those particularly care about gourmet cooking.  Still fewer are willing to shell out $50+ for a class teaching them how to cook a meal they're not likely to replicate.  So I bit the bullet.  I called the store and signed up, knowing I could still chicken out and cancel.

Then I went in to the store and paid my "tuition".  At this point I figured I could still get out of it and at least get a store credit.

But I didn't.

And I'm so glad!

The class I attended was a Bobby Flay Throwdown! theme.  Great man-food.  Perfect for inspiration when cooking for my husband.  When I arrived at the store, I was greeted by name by Becky, the chef doing the evening's demonstration.  She offered me a drink (water or tea) and invited me to sit while we waited for the other three ladies taking the course that night.


Once we were all there, Becky dove right in!  She gave us each a packet of the evening's recipes and started our meal.  She went step-by-step, explaining changes she needed to make based on the seasonality of some of the ingredients, gave insight about some specialty markets in the area where we could find certain elements to each dish, and offered substitutions when some items weren't available.  Imagine my surprise, too, when one of the featured recipes was one I've made before, and will be featuring on my food blog in the next month!


After dinner, we were given a few minutes to browse and shop, and enjoy a 10% discount for the evening, before a scrumptious dessert!


All in all, it was a great evening!  I had a wonderful meal, got some great insight to some culinary gems in my area, and conquered my fear of going it alone!


And in two weeks...I'm taking another class!  Although this one is Martha Stewart themed, and this time a friend is coming along!  Can't wait!

OCD Meal Planning


While the rest of my family might call me inflexible, I like to call myself a planner.  Organized, even.  Perhaps even organized to a fault.  You might call me OCD.  My husband might call me a tad neurotic.  Regardless of the label, I like to plan.  I make lists.  I make schedules.  I run my world off of three calendars: one on my computer where things can be categorized and placed on automatic repeat schedules as necessary, one hanging in the kitchen used as a ready reference to the rest of the family, and one in the planner kept in my purse.  At least once every other month I spread them all out and make sure they're all synched up.  Yes, I've tried the palm pilot.  It doesn't work for me.  I'm a pen and paper kind of girl.

But those are just my calendars.  For events.

For Christmas, I bought myself a magnetic dry-erase menu planner.  It's a grid organized to show a week-at-a-glance of lunches, dinners, and notes.  Since I don't normally cook for breakfast and lunch, and my notes-to-self are all written elsewhere, I use the board to plan out three weeks of meals at a time.  This way, my husband can chime in with meal requests, or look ahead to what's for dinner to determine if he'll need a light snack during his afternoon classes (he's in an MBA program through the Navy).  We can also plan for left-overs and dinners out, special holiday meals, and get-togethers with other couples this way.  The system works really well, especially when I'm compiling my weekly grocery list.

I also like planning special themed meals for holidays, however.  Even for "holidays" like Cinco de Mayo, Derby Day, and Mardi Gras.  And I like periodically looking through my dozens of cookbooks for inspiration.  In addition to the dry erase menu board, I bought some PostIt tabs for my Christmas stocking which I use to mark recipes I want to try.  Of course, I also have a myriad of emails, bookmarks, and Pinterest pins waiting to be tested.  The problem is that I mark all these recipes and then forget about them!  When it's time to plan the week's meals, I'm out of inspiration, don't want to try anything new, or write out an organized list.  I end up reaching into my back pocket for the tried-and-true no-recipe-required dishes my family has handed down and enjoyed for generations.

But today, during my son's morning nap, I was feeling especially inspired.  I grabbed a stack of cookbooks from which I've never cooked, a "pad" of PostIt tabs, and plopped down on my couch to see what I could cook up this spring.  And then I found this tool!  

A menu planner devised for a wife by her husband and formatted for Excel!  It's a month at a glance, has pull-down menus if you'd like to use them, and easy to add tabs for future months!  This was exactly what I was looking for!

When I was finished marking recipes from my cookbooks, I started filling in my planner, making room for Date Nights and Leftovers as I went.  Before I knew it, I had all our meals planned out until June!

Don't get me wrong, I know there are bound to be nights we don't stick to this plan, but that is when it'll be super easy to cut and paste that meal elsewhere in the calendar!  What's even better is I can now see, at a glance, which recipes will be featured on my cooking blog and when they need to post!
