Today is Ash Wednesday, and since we're Catholic, this begins our Lenten Season (and therefore meatless Fridays until Easter). So, I thought I'd share some of the dishes we'll be eating as we fast on Fridays and prepare for Easter. The bonus is that these dishes are relatively light, so they're a perfect start to warm spring weather and laying off the hearty calorie-rich dishes of winter. Come pull up a stool in my kitchen and help me whip up a tasty seafood supper!
Here's what's cookin' this month:
| Southern Fish Fry with Island Flair |
| Honey-Glazed Salmon with Figs & Cranberry Vinaigrette |
| Cod with Artichokes & Basil |
| Jalapeno Capellini with Crab |
| Lighten Up Grilled Pepper Tuna |
| South Beach Shrimp Scampi |
